Raw Cheesecake with Berry Sauce





Crust = 



2 cups of pecan (soaked 6-8 hours)
1/2 cup soaked raisins

1. Grind up ingredients in your food processor then
press down into an oiled 9" spring pan

Cheesecake Base =
3 cups of cashews (soaked for a few hours)
1/2 cup water
3/4 cup lemon juice
3/4 coconut oil
3/4 cup honey
1 tsp vanilla
1/2 tsp sea salt

2. Blend ingredients up really well in your blender (the smoother the better)
3. Pour ingredients over crust bottom and try to knock any air bubbles out of the pan
4. Freeze for about 2-3 hours before serving

Berry Sauce (can be added for fun) =
I really just winged this one, blend up an equal amount of fresh blueberries, agave (or honey), and a few frozen blackberries. Surprisingly blueberries after being blended turn a pinkie color and I had to add the blackberries just to get that color. 
Blend these all together until you get that syrup consistency, it will be very sweet so just drizzle it on, try not to don't drench it.

Recipe:Raw Honey Mustard Dressing

Instructions:
This is terrific with a simple spinach salad--spinach, grated zucchini, small amount of onion.

Blend
1/3 cup raw honey,
2 t regular yellow mustard,
¼ cup oil,
2 T any good vinegar,
2 T water and a dash of salt and pepper.
Add ¼ t dried dill weed and ¼ t dried thyme.

Blend well.
This makes about ¾ cup of dressing, enough for 2 or 3 salads.




Recipe:No-Cook Healthy Raw Honey Bars

Instructions:


Using a food processor,
chop 2 cups almonds,
1 cup dried apricots
1 cup dates

Process until well mixed and then add
1 cup raw coconut.
Gradually add 1 cup raw honey

Process until a stiff dough if formed.
Press mixture into lightly buttered 9 inch square or 12x7 inch baking pan.
Cover and refrigerate until dough is firm enough to cut into bars.
Dough can also be shaped into small balls and coated in powdered sugar, or a cinnamon and sugar mixture.
